Healthy Eggplant & Cauliflower Cutlets or Patties made with Vegetables.

Eggplant & Cauliflower Cutlets or Patties

Ingredients, Method & Procedure.

1/2 lbs eggplant diced or chopped
1/2 lbs cauliflower boiled and chopped
1 small onion chopped
5 cloves of garlic chopped
2 large eggs
1 cup bread crumbs
1 cup flour
Olive oil for cooking
Seasonings to taste

Serving: 6 (snacks)

Procedure or Method

1) Chop garlic and onion and cook in a pot until it is soft and translucent.

2) Cook cauliflower by boiling in salted water until it is soft in a different pot.

3) Dice eggplant in small square pieces and mix with the sauteed onions in the same pot and cook until the eggplant is cooked and is soft then add chopped boiled cauliflower to the mix and continue cooking, salt, pepper and other seasonings can be added at this time and cook for few minutes until all the vegetables are cooked and dry.

4) Take the mix of the burner and let it cool for a little bit. When it is cool enough to be handled mix one egg, ½ cup bread crumbs and 2 or 3 table spoons of flour to the mix. Mix it well and check for seasonings and taste.

5) Make small Cutlets or Cakes by shaping it by hand and lay it out on a tray. When they are all shaped into cutlets then bread the cutlets by coating it with flour first, then with beaten egg and the remaining bread crumbs one by one and by putting them aside.

6) After breading is complete fry then in a frying pan with little olive oil, until the cakes have a golden brown crust. After they are all cooked they are ready to be severed with a dip or just plain.
