Make these flavorful little cookies well ahead of the holiday season so that they can mellow.

Peppernut Cookies / Pfeffernusse

Ingredients, Method & Procedure.

1/4lb. (1/2 c.) butter or margarine, at room temperature
3/4 c. packed brown sugar
1 egg
1/2 c. dark or light molasses
2 1/3 c. all-purpose flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. black pepper
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. salt

1. In large mixing bowl, beat butter, sugar, egg, and molasses with electric mixer until smooth, or mix with spoon.

2. On a piece of waxed paper, stir together flour, cinnamon, baking soda, black pepper, nutmeg, cloves, and salt. Add flour mixture to bowl. Stir in flour mixture.

3. Turn the dough out on a lightly floured surface. Knead until a good consistency for shaping. If dough seems too soft to shape easily, refrigerate until firm.

4. Heat oven to 350°F. On a floured surface, roll one quarter of the dough into a long roll about 1 inch in diameter. Using a sharp knife, cut the roll into 1/4-inch slices. Roll each slice into a little ball. Place in rows on a greased baking sheet.

5. Bake until set and golden brown on bottom, 8 to 10 minutes. Cookies harden on standing.

6. Store cool cookies in an airtight container with a slice of apple to mellow them.

Preparation time: 30 to 40 minutes
Baking time: 30 to 40 minutes
Makes 8 dozen
