Cucumber Salad / Agurksalat

Cucumber salad is eaten in all Scandinavian countries. The cucumbers must be sliced paper thin! A Norwegian cheese slicer works well for this.

Ingredients, Method & Procedure.

1 cucumber
2 tsp. vinegar
1/2 tsp. salt
1 tsp. sugar
1/4 tsp. white pepper
chopped parsley, chives, or dill weed

1. Slice the cucumber paper thin.

2. Mix vinegar, salt, sugar, and pepper in a small bowl and pour over cucumber slices.

3. Sprinkle with parsley, chives, or dill weed before serving.

Preparation time: 10 minutes
Serves 4 to 6

This salad is best made with European or Asian cucumbers.These are longer and thinner than the ordinary variety sold in the United States, and they have few or no seeds. Usually sold in a plastic covering, they are more expensive than regular cucumbers, but the taste is worth it.
