Ingredients, Method & Procedure.

1 cup flour

½ tsp baking soda

1 ½ Tbsp sugar

¼ tsp salt

1 beaten egg

1/8 cup white vinegar

7/8 cup milk

1/8 cup vegetable oil (plus more for the pan)

In a large bowl, mix together the dry ingredients; set aside. In another bowl, mix together wet ingredients. Add wet to dry ingredients and mix until smooth. Cook in lightly greased frying pan. Makes about 10 pancakes (4-inches in diameter). Recipe may be doubled or tripled.

(Optional: Add some blueberries or chocolate chips to the pancakes as soon as they are in the frying pan.)
