Butterscotch Muffins

Ingredients, Method & Procedure.

6 Tbsp. butter or hard margarine, softened

¼ cup brown sugar, packed

1 large egg

1 ¼ cups milk

2 cups flour

4 oz. box instant butterscotch pudding powder

2/3 cup butterscotch chips

1 Tbsp baking powder

½ tsp salt

Beat butter and brown sugar in large bowl until light and creamy. Add egg. Beat. Add milk. Beat well.

Combine remaining 5 ingredients in medium bowl. Make a well in center. Add butter mixture to well. Stir until just moistened.

Grease 12 muffin cups with cooking spray. Fill cups ¾ full. Bake in 400F oven for about 18 minutes until golden, and wooden pick inserted in center of muffin comes out clean.

Let stand in pan for 5 minutes before removing to wire rack to cool. Makes 12 muffins. (If you have some extra butterscotch chips, you can melt them and drizzle them over the top.)
