Zucchini Chocolate Chip Muffins



Ingredients, Method & Procedure.

1 ½ cups flour

¾ cups sugar

1 tsp baking soda

1 tsp cinnamon

½ tsp salt

1 egg, lightly beaten

½ cup vegetable oil

¼ cup milk

1 Tbsp lemon juice

1 tsp vanilla

1 1/4 cup shredded zucchini

½-1 cup mini semi-sweet chocolate chips

¼ cup chopped walnuts

In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla. Mix well. Stir into dry ingredients until just moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 20-25 minutes or until muffins test done.
