Chicken Biryani

Ingredients, Method & Procedure.

1 lb Basmati Rice

1 lb Chicken

14 oz Onion

4 Tbs Vegetable oil

4Tbs Ghee or Butter

½ Tbs Coriander powder

½ Tbs Turmeric powder

½ Tbs Chilli powder

1 Tbs Ginger paste

1 Tbs Garlic paste

1.05 oz Cloves

1.05 oz Cardamom

1.75 oz Cinnamon

1.05 oz Black pepper

Salt to taste

1) Wash the rice and keep it aside for drying and cut the chicken into 8 pieces.

2) Initially, we have to begin with chicken gravy for the preparation of briyani.

3) Slice the onions and heat oil in the pan and add sliced onion to the oil and fry until golden brown.

4) Add coriander powder and stir followed by ginger garlic paste, chili powder, turmeric powder and stir.

5) Keep adding little water after intervals and continue stirring till the mixture becomes a thick paste and turns reddish brown, see to it that the mixture doesn’t stick to the base of the vessel.

6) Then add in the chicken pieces to this thick paste and add little water after intervals for uniform cooking.

7) Cook until chicken is well done and add salt to taste, so we are done preparing the chicken gravy.

8) Take a pressure cooker and add ghee to the pan and heat it.

9) Add into it cardamom, cinnamon, cloves and black pepper then add in the rice and sauté it till golden brown

10) When the rice has turned golden brown add in the chicken gravy to the rice and stir well.

11) Then add enough water for the rice to cook and salt to taste and close the lid and wait for 20 minutes or until the rice gets cooked.

12) Serve hot garnished with fried onion slices.
